I am also affected. I have a monitor with audio output via HDMI/DP connected to my Ubuntu 20.04 system. After reboot, default sink is set back to other (USB audio) device automatically. Have to manually switch it back to the HDMI/DP device in the settings manually. In Ubuntu we always prefer whichever device connected most recently, which is probably your wireless headset.
