Debian is now at version 3.0.0-6, and upstream released 3.0.1 some time
ago...

Unless I am mistaken, gramps will be automatically merged from Debian
into Intrepid Ibex. However, there is little chance gramps 3.0 will be
updated for hardy... (this would a be a major version upgrade, on a LTS
release...)

No.  Not at this point.  You can ask to have Gramps 3.0 backported from
Intrepid to Hardy.  See:
