Shouldn't the exchange server type not be shown if exchange operations plugin is not enabled? Looks like enabling Exchange Operation plugin inside Evolution solves the problem. I don't know why but this plugin is disabled by default. Run: export LD_LIBRARY_PATH=/usr/lib/evolution/2.8/ /usr/lib/evolution/2.8/evolution-exchange-storage in a terminal as a workaround to start the exchange backend.
