This problem (or a similar, broader one) applies to Maverick Meerkat (10.10). I noticed this while highlighting from 'left to right' or 'right to left', with the cursor underneath the text. Also if highlighting while moving the cursor up along the left margin. Clicking outside the window shows text and stays highlighted. I was unable to capture a screen shot of this because everything that you do out side of the window while the content is invisible causes it to return. This is an aesthetic bug, not a functionality bug, but it does exist. In Gutsy (evince 2.20.0) I have missing text, but also the selection appears to bleed into other areas of the page.
