How did you remove /etc/init.d/postfix:

update-rc.d: /etc/init.d/postfix: file does not exist
dpkg: error processing postfix (--configure):
 subprocess installed post-installation script returned error exit status 1

The standard way to do it is to purge (not just remove) the package, but
that probably won't work with the postinst failing.  You might,
depending on you level of comfort with such things edit the postinst to
not call update-rc.d. I'm away from my computers now so it's difficult
to advise on the best course of action.

I was able to finally remove postfix and then reinstall it.
