Hi!

USB I don't know but the Mijia thermometer is BT and Fedora can read its
broadcast through gattool. It runs using a AAA battery which is supposed
to last for about a year.

I have seen some USB ones, but it's not clear if they are just 
dataloggers or you can get constant readings.  There are also bluetooth 
ones which would give you a lot of range.  However, if your computer 
doesn't have BLE, you will need to get a USB BLE bluetooth dongle. 
That's what I did.

+1  Reinstall and copy is what I do too.  Basically I make up to date 
backup copies of anything I use that might not be in my home directory 
(websites from var/www/html and databases) and save those to my home 
directory.  Then I can reinstall them easily after I've reinstalled the 
operating system and my home directory.

You need to find a computer/motherboard which offers the connector for it !

I guess it's less used, but old and last used ~30 years ago.

Don't know it it's still running and  - as said - if it's still here.

Other question are:
- are your disks still readable ?
- data on it that worth the effort ?

SSD disk and a 2TB HDD disk. My old computer has only a 2TB HDD disk

What is the best way to replicate the installation of my old computer

You need a controller. http://www.deviceside.com/fc5025.html has a read-only
controller with USB interface.

If you have an old enough motherboard that has a floppy disk
controller on it linux used to support them.

At worst you might have to download an older livecd if support was
removed in newer versions. (no idea if it was removed).
