find frustrating, or seems "stupid", first take a look in the in-built
"Help" facility, while not intended to be an "all encompassing" detailed
reference, it can often give you a reasonable clue about the information
you need to track down in other resources, such as the forum:

This software has been around, in one form or another, for almost 17
years and there have been numerous articles and tutorials written about
it. So once you have a clue to what you should be looking for (eg. the
in-built "Help" facility), it should not be difficult to do a web search
and pinpoint the information you need.

How do I change the default font?
You can set the default font and its size in Tools > Options >
OpenOffice.org Writer > Basic Fonts (Western).
ALTERNATIVE METHOD: Choose Format > Styles and Formatting, right
click on Default and choose Modify > Font.

it to the font size I want while it's still blue. So stupid.

If you mean that it displays large on-screen, there is a little slider on 
bottom right of the OpenOffice window; either pull this back towards the left, 
or double click in the % box on the bottom right corner and choose a scaling 
factor that suits you.  Or choose /View /Zoom and adjust the scaling factor.

I have had that happen to me a couple of times.  What my problem was 
(and it might be yours as well) there were some spaces on the page with 
nothing in them , so could not be seen, that were set at the default 
12.  Then I would change to font size to something else where I was, but 
when I got to those other places it seemed to magically change back to 
12.  The solution I found was to highlight the entire page by holding 
down the mouse button and swiping the entire page and then change the 
font size.

I think your default template is the issue. If you modify the default 
template the font size you wish, save it under a new name, then change 
the default to the new template your issue should be solved.

What is probably happening is:  Since 12 is the default, when you change 
to 16 you probably don't have the entire document selected which still 
leaves some parts of the document with 12 still in effect.

"Current document only" (when this is clearly not what was wanted), 
Tools | Options... | OpenOffice Writer | Basic Fonts (Western) | 
Default sets the default for this and future documents.


OK, I mixed with the way you change fonts under Styles and Formats (F11)

Does the text print the wrong size, or are you talking about its 
appearance on screen? Remember that the screen appearance (unlike the 
actual print size) is influenced by the zoom factor in the view settings.


Go to View | Zoom... and experiment with the settings there to see 
what suits you. Perhaps start with Optimal and Automatic.


These settings are retained between documents and uses of OpenOffice 
and even across reinstallation or updating, so this fits in with your 
suggested symptoms.

Right click in the % box at bottom right of OpenOffice Window and select 
Optimal or Page Width (or some other setting that best suits you).
