I can't see how I can subscribe (or unsubscribe) to IMAP folders in the sogo 
web interface.

seeing) any of the other folders? Or could the user still subscribe to a

And the subscription is only client side based, right?
It's about what's shown on the clients. 
It has no effect on the folders in the webinterface.
