Sounds like a great class. For general resources, I'd point you a few online syllabi/course websites related to your course. Yeah, it does sound great. As a technical resource for the basics, given the tools you're planning to use: http://freevlog.org My experience is that most people don't have access to a Mac, let alone people who are socially disadvantaged or people on the move - so it's also worth teaching the equivalent PC tool - Windows Movie Maker for basics and Sony Vegas for (inexpensive) advanced editing.
