Sometime you have to choose which contact info you want to put as favorite. For 
example  phone, work phone, etc.

Hello,

Yes, on the Apple Watch 7 and up there is a on screen keyboard. Just as stated 
before: double tap on the text field, and the keyboard should pop up, it will 
take up about 3/4 of the screen. It is accessible and convenient some of the 
time. It gets much easier to use with Watch OS 10, as they have added the touch 
typing function to the rotor  when in a text field. You also have the same 
rotor editing functions on the watch as you do on the iPhone. It’s a pretty 
cool feature.

However, if you want to edit after dictating, you will probably want to be 
using a keyboard.  Either the Phone keyboard if you can get that to work or an 
external keyboard.

When you tap the button to edit text, a tiny keyboard should appear. In the 
bottom right corner is a Dictate button. Double-tap that, dictate your message, 
and do a two-finger double-tap to stop dictating. That's way easier than using 
the keyboard. Your phone may also offer to let you type to the watch using it's 
keyboard.
