Apart from forgetting the keyboard and pairing it again and doing the Reset 
Network Settings there probably isn't much you can do.
Are you using that keyboard with any other devices? If not maybe make sure it 
is not out of battery power.

I am also running the iOS 17.1 Developer Beta and I just used my Logitech
K780 keyboard this  morning to reply to a bunch of messages. I had this 
keyboard paired to my phone forever and while I wasn't doing anything fancy, as 
soon as I switched it on I was able to type into the edit field on Facebook, 
the Messages app and also in WhatsApp.

I am also running the iOS 17.1 Developer Beta and I just used my Logitech K780 
keyboard this  morning to reply to a bunch of messages. I had this keyboard
