What I've done is, if you can figure out what app is playing the music, go into 
that app then remove it from the app switcher.  I've found that if I paus stuff 
before doing the removal, I haven't had a problem.  Just that I generally 
forget to do it.  Hell getting old.

Yes, if the person on the other end of your call hangs up before you do the two 
finger double tap then IOS will think you want to start up your music again, 
since it doesn't think  you're on the phone any more. I either do a really 
quick two finger double tap to hang up, or I wait a bit to see if the other 
person hangs up first.

If you want to check what will start playing if you do a two finger double tap 
or magic tap, go to your home screen, place focus on the top status bar and do 
a three finger swipe up to open the Control center. You can then single finger 
swipe right until you hear Media controls which will announce which media 
currently has focus. There are also buttons in it to tell you the playback 
destination,  go back, play, and go forward.

This usually happens when you use a "magic tap", which is a 2-finger double 
tap. I am guessing that when you tried the 3-finger double tap, it registered 
as a 2-finger double tap. When music starts to play, simply do another 2-finger 
double tap and it should stop.

Hello,

Normally a two finger double tap will start and stop music playback.

Perhaps your device registered your doing a two finger double tap and hence 
music started playing.

What the iPhone registered when you thought you did a 3-finger double tap was a 
2-finger double tap which is the so-called "magic tap" which works as 
Play/Pause or to answer a call when your phone rings or to hang up when you are 
done.
In the last couple of versions of iOS even if the app switcher is empty a 
2-finger double tap often starts playing whatever you were last playing, e.g. 
if you played music it will start playing music, if you had been listening to 
an Audible book it would start playing your book.
There are 2 ways to stop playback, the easiest is to simply do another 2-finger 
double tap and it will stop whatever is playing. If that for some reason does 
not work you could open the music app if that is what is playing and find the 
Pause/Stop button there, but it should not be necessary. This happens to me at 
times as well and what happens especially often is that when I hang up a phone 
call with a 2-finger double tap and if the other person had already hung up it 
starts playing the book I last listened to on Audible. This is because the call 
has already ended so iOS interprets the 2-finger double tap as Play/Pause and 
not "Answer/Hang Up. When this happens I simply do another 2-finger double tap 
and it stops again.

Hello,

 

I have an IPhone 8 & am current with IOS.  Several times now I have somehow
accidentally tapped on something & the last song I played starts playing.  I
can see a box on the screen & moving my finger around the box gives me all
sorts of info except stop.  I can't even find a mute button.  App switcher
does not contain the app playing the song so no way to stop it there either.
I have had to turn my phone off & back on.  Surely there is an obvious,
better way that I am missing.  Also, any ideas as to what could have
accidentally started music playing?  The music icon is at the very bottom
right of my screen so I would have to make a deliberate choice to tap there.
