I don't have a Gmail account on my employer provided iPhone, but I did
find the following instructions on this web site:
https://www.travelertechie.com/2018/10/replace-archive-button-with-delete.html

1. Tap on *Settings*.
2. Tap on *Passwords & Accounts*.
3. Tap on the account that has the Archive button, under the *Accounts*
   list.
4. Tap on the *Account* with the email address.
5. Tap on *Advanced*.
6. Under the section *Move Discarded Messages Into*, select the
   *Deleted Mailbox*.
7. Make sure you swipe back to the *Account* page, and tap on *Done* on
the upper right corner, to take effect.
8. You might need to restart the app or tap on another message to see
   the Delete button.
9.

It looks like you're using Gmail. If so, do you see an archive button? If you
see an archive button you can go into your settings for your Gmail account and
change the default behavior from archive to trash.

It will put them in the trash folder and then Google will delete them
after 30 days. This is what I prefer, so I don't know how to change
this. Maybe someone else can answer your question or you could look for
a delete permanently option or do a Google search to find such an option.

Yes, I am using Gmail. When you say trash them, do you mean that it will delete
them? Or will it put them in my trash folder? I’m wanting to completely delete
everything in my trash folder. But when I do the three finger swipe up, nothing
happens.

It looks like you're using Gmail. If so, do you see an archive button?
If you see an archive button you can go into your settings for your
Gmail account and change the default behavior from archive to trash.
