Hi. I just went through this, twice as a matter of fact. The easiest way is to 
just unpair your old watch via the watch app on your iPhone. This should take 
care of everything regarding your old watch. Once you unpair the old one, turn 
on your new watch while you are right by your iPhone and you should get 
prompted to pair a new Apple Watch. If you don’t get prompted, just open your 
watch app and you will see the prompt. HTH

Hi Keith,

When the new watch arrives, unpair the old one. This will erase all the content 
and back it up to your phone. Then pair the new one and restore it from your 
backup. That's what I did, and it worked great.
