Yeah, this is what I do, but in my particular case, I can't delete a certain
app. It is the game center app.
Any reason why it refuses to allow me to delete it?

Double-tap and hold the app on your screen. In other words, tap twice
quickly, but on the second tap, keep your finger there. After you hear the

double-tap it. you'll get a confirmation dialog asking if you want to
delete. Press the delete button. Once you've done this, double-check to see

edit mode.

Game Center is part of iOS. You cannot remove apps that is part of iOS. 
You could instead move it to the dock or on a different page of the home 
screen or even move it to a folder of unused apps say.
