I'm not sure, but it's pretty self explanatory once you get in there and 
start looking at the different options.

the recordings to take notes.

Can someone suggest too me a simple voice recording app for iOS that can be 
stopped and started with Siri?

If no such app exists, something that is easy too operate if Siri is 
disabled/turned off. Maybe by hitting the up (Start) or down (Stop) volume key?

Having no time restrictions on how long the recording can be would be nice too.

Any suggestions?

Any recording app is going to pick up VoiceOver unless you either use 
headphones, or mute speech while recording.If she plans to email the 
recordings, she needs to keep them under 5 MB or possibly 10 MB depending on 
the ISP limits for attachments.
All recording apps will record until your iPhone runs out of memory.
You can tell Siri to record a memo, but I don't think you can tell it to stop 
recording.  I've never tried but I suspect that once the mic is being used to 
record, Siri is unavailable.

disabled/turned off. Maybe by hitting the up (Start) or down (Stop) volume key?

Having no time restrictions on how long the recording can be would be nice too.

Hi, I looked up this app. The details section on the app says that the recorded 
files are uploaded to dropbox. I have never used dropbox before, can you 
retrieve the files from dropbox to say put on an sd card or a flash drive? If 
so, how do you do this? Alternatively does anyone know of any recording apps 
that will make MP3 files that do not automatically go to dropbox

The RecUp app is also a great one. Again, speech needs to be muted if she 
doesn't want it to be picked up in the recording. The nice thing about this app 
is that the only button on the screen when recording is the stop button, so 
that makes things very easy.

I have used the voicememos app  to record things. She just needs to hit record 
and then do a three finger double tap to turn speech off on voiceover. She can 
then record what she wants and end recording by a two finger double tap. At the 
beginning of the recording she will hear speech off, but that is it.
