You can do it the way Anna described or you can connect your iPhone to iTunes 
and simply activate the restore button, if the backup was made with iTunes then 
the software knows where it is.
Anyhow, it's highly unlikely Apple will mess up your phone, you can always ask 
the Apple person you deal with to make sure an iCloud backup was done just 
before and make sure that before you leave the Apple Store all is what it 
should be as they can help you in case something does in fact go wrong which is 
unlikely.

iTunes backups on a Windows 10 computer are in c:\users\Your User 
Name\AppData\Roaming\Apple Computer\MobileSync\Backups
However, that doesn't really matter since you can't do anything with them. For 
example, when I go there I see a folder called 
65937a14cc05b8b63f632a0e0912dc48fccc93cc and when I open it there are 260 items 
in that folder, most of them more subfolders and while there is I believe 
software available which you can use to view or extract specific information 
from an iTunes backup I believe most of these applications are inaccessible.
If you want to delete a backup you can open iTunes, go to Edit > Preferences > 
Device Tab and you can see your backupds here and delete any you don't want or 
need any more.
Making an iTunes backup is OK, better though if you encrypt it, e.g. check the 
checkbox for that and enter then re-enter a password and make sure you don't 
forget it. Encrypted backups include more information such as passwords.
It is still a good idea also to backup to iCloud as an iCloud backup nowadays 
is almost as good as an encrypted iTunes backup.

you when the last backup was done, i.e. it will give you the date and time.

problem I have, and they say I should backup my phone just in case. So if

iTunes backups on a Windows 10 computer are in c:\users\Your User 
Name\AppData\Roaming\Apple Computer\MobileSync\Backups
However, that doesn't really matter since you can't do anything with them. For 
example, when I go there I see a folder called 
65937a14cc05b8b63f632a0e0912dc48fccc93cc and when I open it there are 260 items 
in that folder, most of them more subfolders and while there is I believe 
software available which you can use to view or extract specific information 
from an iTunes backup I believe most of these applications are inaccessible.
If you want to delete a backup you can open iTunes, go to Edit > Preferences > 
Device Tab and you can see your backupds here and delete any you don't want or 
need any more.
Making an iTunes backup is OK, better though if you encrypt it, e.g. check the 
checkbox for that and enter then re-enter a password and make sure you don't 
forget it. Encrypted backups include more information such as passwords.
It is still a good idea also to backup to iCloud as an iCloud backup nowadays 
is almost as good as an encrypted iTunes backup.
