One other setting I know many Voiceover users turn off is the Slide to Type 
keyboard, but if you want to use it I suggest you slightly increase the length 
of time you have to hold your finger on the screen before it activates 
otherwise it might get in your way.

I wouldn’t turn off anything that you didn’t turn off on your prior iPhone.

I cannot think of anything that I did differently with my 13 pro than I did 
with my SE 2020 as far as settings.

Like someone else said, this is a personal choice question.

My only crusade is to get people to recognize that if screen brightness impacts 
battery life; which even Apple says it does, then setting the brightness to 
auto under accessibility display and text size.
Then, use the screen curtain and the brightness will end up at 0.  And if you 
turn off VoiceOver, or just turn off the screen curtain to get help from a 
sighted person, the brightness will adjust immediately.

I have turned off the 120hz refreshrate. Not at first, but noticed longer 
battery usage with it turned off.

This is such a personal question, that I feel like you're wasting your time
asking. Some people will turn things off because someone tells them to,
without taking the time to understand why they turned it off in the first
place, or whether they might benefit from what was turned off.

Pick up your phone, begin using it, and if you run into anything odd or
unusual, ask. Then, you can learn about the intent of the feature, and you
can learn whether you want to turn it off or not.

I can't think of any feature that you should run right out and turn off.

I see this nonsense even with mainstream reviewers, who put out sensational
articles like "top five things you must do with your shiny new phone) and
each time, I am upset by it.

Each of us will have different use cases for our devices. Each of us have
preferences. Each of us, therefore, should be allowed to make informed
decisions regarding any features we turn on or off. Simply having someone
tell us to turn something off doesn't count as an informed decision. What
if it is something you would have benefited from immensely?
