That may be a question for Apple or your bank, but since it’s really easy to add new cards I would just delete the old card and add it again. I just looked and I didn’t see an edit button anywhere which makes sense I guess since once the card is entered that information is not kept on the phone. However, there is a Remove button at the bottom right if you tap on the card and then select “More Info”.
