Keynote does work well for presentations. VaShaun, I don't think you can find an app that will display your gestures, not actually showing your fingers as they move. I don't know of anything, perhaps some sort of camera setup could show your iPad screen and your hands. The problem is similar to projecting you laptop's screen during a presentation, if you are seated at the computer, noone can see what you are typing, but they could see the results of your keystroke on the big screen.
