I updated my iPad but left my iPhone alone. I depend on the iPhone for work 
(email, calendar, texts) so I was hesitant to upgrade only to find 
issues...and... I had my doubts about the new UI.
 
That said, after spending several days with the iPad, and adjusting to the new 
UI, I no longer liked using iOS 6 on the iPhone and updated it yesterday. 
Despite a 180 degree swipe gesture change in mail (swipe right->left now to 
trash), I have few complaints.
 
The multitasking window is a huge improvement, the new Facetime audio is 
fantastic, and I've had no issues with either device against our Cisco 
deployment (7.2.x) including connecting to our Enterprise WPA2 SSID.

If you want to stick with the Apple ecosystem, you'll have to upgrade at some 
point, whether it's by upgrading the software on your existing devices or 
buying new devices that won't run the old software.  It may be prudent to wait 
a little bit to let some bugs get fixed and for Apple to make some UI tweaks in 
response to user feedback, but they're not going back at this point.  And given 
the lack of low-level control that you have over an iOS device compared with a 
personal computer running Mac OS X or Windows, the sheer number of security 
vulnerabilities that aren't going to get fixed in iOS 6 that are fixed in iOS 7 
is a little concerning to me.  

I've already got 2 apps that aren't getting updated on my iPhone 4S/iOS 6 
because the new versions require iOS 7.

Regarding Julian's point...anyone know of folks actually doing work to evaluate 
speed differences of older iOS devices that HAVE upgraded to iOS 7?

Personally I am concerned about how much slower iOS 7 will be on my iPhone 4S.  
I got burned pretty badly with the iOS 4 upgrade on my iPhone 3G.  

Also I'm due for a phone upgrade, and Apple is offering pretty good trade in 
value for my 4S, so I might just go for a new 5s now.

There does seem to be an effective solution for resolving some of the speed 
complaints, especially lag on using the keyboard : Disable 'Documents and Data' 
in the iCloud settings and that fixes all keyboard problem
