As far as I have observed in operating the FT857's I have, CAT does not
update anything when in transmit mode. My downlink radio updates at the
programmed frequency delta but my uplink radio only updates when you let go
of the PTT.

simple switch from Kilo to Kilowatt and zulu to Zanzibar is usually all it
takes to be understood.

Having been on the bird on the night the recording was made (yes you can
hear my feeble call sign in there a couple of times) I have to say, it was
no worse than 40 meters earlier in the day with the WPX SSB contest going
on. The whistles were a bit over the top.
