Selection Field usage vs Character menu performance

Hello Listers, ARS 7.1 MS SQL2005 Does anyone have any insight in just when it is best to choose a selection field over a character field? The character field would have a menu and the display type would be Drop-Down List. I am asking because time and again I get customers would never want to
