I compiled and installed Asterisk and it is running, did I miss a
configuration or dependency for Chan_Capi somewhere ?

gcc -pipe -Wall
Are you compiling against stable ?
Check the Makefile .. you need to comment out the line that says
CFLAGS= -DUNSTABLE_CVS
