You could write an extension which executes meetme kick, for all the channels, but I am not sure how to execute such a thing at a given time. Create a call file, and schedule it to run with cron. Or you could AGI a PHP script that runs before each caller enters the conference room that sets the AbsoluteTimeout on the channel to midnight that night (calculating the proper seconds, of course). The conference would of course die at midnight after all its participants left.
