In the trunk definition you can specify which codecs are permitted for that
channel, for example...
disallow = all
allow = alaw
will force all traffic over that trunk to use alaw. For the extensions, if
you want to permit multiple codecs then, for example
disallow = all
allow = alaw,ulaw,gsm
