Hey Richard,
When looking for commands in an app on OSX the first step is to use the
“Search” field
It’s hidden at the bottom of the Markup menu. Hidden as in I would never have
thought to look there, but found it when I typed “preview” in the help box.

Preview in what? BBEdit, text, browser?
See the PDF manual, which you can open by choosing "User Manual"
in the Help menu.
You can also download a copy of the manual from:

Latest version:

The 'preview command' is referenced a lot but I cannot find said command.
How is this done?

What version of BBEdit are you using? The notes you link to are for BBEdit
9.2. I'm using 11.5.2, so if you're still on 9, I don't know if this is
relevant to your current version, but...in BBEdit 11, if you go to Help ->
BBEdit Help -> Expert Preferences, and look at the 5th bullet under Windows

Is there a way to increase the number of files that are listed as "most
recent"?
The default list only lists a meager 6 items, then groups files/folders
etc, wherein items are sorted alphabetically. Neat as that may be
sometimes, I really would like to have a much longer list of items, sorted
