Even if JDK 7 can be introduced into the Mac OS X Java version system, Eclipse will still have to modify their launcher to use it. Last I recall, they were still hard coding paths into /System/Library/Frameworks/JavaVM.framework/... I can't say it enough - to get the "best" $JAVA_HOME on the Mac
