You will need a couple of E1 cards as well.  I would focus on;
- Building a PSTN network
- Building a Frame Relay network
- Getting a 3750 for LAN QOS (frankly, I'm sure the 3560 will do the same
thing anyway since it handles QOS but I'm not sure yet if it'll do
everything for lab purposes.)
- Setting up a gatekeeper.  This can be done very cheaply with a 2610 and
the appropriate IOS feature set.
- CRS server
- CUC server
- Switching module for BR1 (I'm using the 16-port module)

I'm sure I'm forgetting something.
