Un proxy no se hace no iptables, se lo hace con una herramienta que sea un proxy server como Squid,iptables te ayuda a hacer port forwarding, redireccionamiento, filtado de paquetes, etc, si necesitas monitorear tu red, debes tener instalado iptraf, jnnetop, puedes usar tcpdump, puedes ver tambien
