sed -i -r 's/^(UPDATEDEFAULT=).*/\1no/' /etc/sysconfig/kernel
You can do it before installing it, but then you would need to manually

* uninstall older kernels (necessary?)
* wait for 5.3 / do NOT "yum update" during that period
*
