kernel-3.10.0-327.*.el7 comes from RHEL 7.2. (although I don't know
what "ug" means in your version, there?)
kernel-3.10.0-493.el7 ships in the RHEL 7.3 Beta. You need a RHEL
subscription to access the RHEL betas (CentOS doesn't build them).

I think I'll leave the kernel intact and use ceph-fuse on most computing
nodes, considering the compatibility of other software used by our jobs.
Hope that will improve the stability. For sure, we'll try a few nodes
