I've done a bit of testing (rackspace, mosso, amazon), and latency is a big enough issue to be noticeable for our site (graphic intensive by nature). We run staging servers in US though as it's cheap and easy, and speed isn't a key feature. Had some servers in engineyard out of japan and that was

I'd say it entirely depends on the type of the site and application. Also - depending on the customer you might have legislative issues with hosting content NOT in AU/NZ (happens _very_ often with government). I’m not convinced speed / latency is really an issue these days. However,
