No issues with 7.0.3 for UCCE 12.5, Expressway, CUCM 12.5/14, CUC 12.5 for me.
7.0.3 is an iffy esxi release though, be sure to read the vmware notices
regarding it, depending on your environment and which 7.0.3 release you are on

I’m going through a similar process, albeit lower target ESXi version.
In researching compatibility, and opening several cases, the just of it is:
- product specific documentation (installation, requirements) takes precedence
- Cisco Collaboration Infrastructure requirements is next
Is anyone running ESXi v7.0u3? We're running our UC applications on spec
based HP blades and we're looking to upgrade the ESXi but the Cisco matrix
lists a smattering of support for 7.0 and 7.0u1.
