Descaling is the key. The harder your water is the more you have to descale it.
It does sound like that hers is going bad again. I have lost one due to not
descaling enough but the other one seems to be going strong at this point after
two years.

Niffa, if the consistency of the fudge was like peanut butter, an idea I
have is if you again experience this happening, use this as a sandwich
filling for cookies, or between cake layers.
Or simply eat it open faced on digestive, or other plain cookies or
crackers.
