Diabetic Raisin Bars

 

Makes 10-12 bars

 

1/2 cup (4oz) shortening

1 egg

1 teaspoon vanilla

1 tablespoon powdered sweetener

1 teaspoon cinnamon

1 teaspoon salt

1 teaspoon baking soda

1 cup (8oz) flour

1 cup (8oz) oatmeal

2 cups (16fl oz) water

1 cup (8oz) raisins

 

Method:

 

1. Boil raisins in water. 

2. Mix ingredients in order, then add cooled raisins. 

3. Pour into 9 x 13 inch pan, greased. 

4. Bake in 350 degree oven for 25 to 30 minutes. 

5. These freeze well.
