New Orleans Bread Pudding

2 cups stale white bread, cubed, packed into measuring cup (4 ounces)

2 cups milk

2 eggs

1 cup granulated sugar

1 tablespoon vanilla extract

1/2 cup dark or golden raisins

1 medium tart apple, pared, cored and diced

2 tablespoons butter, melted

For Whiskey Sauce:

1/4 cup melted butter

1/2 cup granulated sugar

1 egg

1/4 to 1/2 cup bourbon whiskey

Combine the bread with the milk in a mixing bowl. Beat the eggs with the sugar and vanilla. Blend into the bread mixture along with the raisins and apples. Pour the melted butter into a 1 quart casserole or soufflé dish. Turn bread mixture into the dish. Bake at 350 degrees for 45 to 50 minutes, or until the pudding is set. Serve warm or chilled with the whiskey sauce. To prepare the sauce, cream the butter and sugar in a metal bowl. Place over boiling water. Add the egg. Whisk rapidly until sauce is frothy and slightly thickened. Remove from heat. Whisk in the whiskey to taste.

Tips:

You may substitute brandy, rum, or a fruit flavored liqueur, or 1 tablespoon vanilla for the whiskey in the sauce, for a different flavor.

Microwave Directions:

2 tablespoons butter

For Whiskey Sauce:

1/4 cup melted butter

1/2 cup granulated

1 egg

1/4 to 1/2 cup bourbon whiskey, brandy, rum, or 1 tablespoon vanilla

Place butter into a 1 to 1 1/2 quart microsafe casserole or soufflé dish. Microwave on high for 1 minute. Pour milk into a microsafe bowl. Microwave on high for 3 to 5 minutes until boiling. Add bread to the milk. Whisk eggs, sugar and vanilla together. Add to the bread along with the raisins and apple. Blend well. Turn into the casserole with the butter. Sprinkle with cinnamon sugar. Cover with plastic wrap. Microwave on medium for 15 to 17 minutes, or until pudding is set. Serve warm or chilled with sauce. To prepare the sauce, place butter into microsafe bowl. Microwave on high for 1 minute until melted. Whisk in the sugar and egg. Microwave on high for 1 to 2 minutes, whisking two to three times until sauce is fluffy and slightly thickened. Whisk in the whiskey or other flavorings.
