BAKED PARMESAN TOMATOES Gluten Free, Vegetarian, and Delicious Cook Time 20 min Serves 4 Calories 91, Carbs 6, Fat 6, Potein 3 4 tomatoes, halved horizontally 1/4 cup freshly grated Parmesan cheese 1 teaspoon chopped fresh oregano 1/4 teaspoon salt Freshly ground pepper, to taste 4 teaspoons extra-virgin olive oil Preheat oven to 450F. Baked Parmesan Tomatoes 2-3 large beefsteak tomatoes 1 cup shaved parmesan cheese 1 Tbsp dried basil 2 Tbsp fresh Italian parsley, roughly chopped Preheat your oven to 400 degrees. Butter a baking sheet. Slice the tomatoes into 1/4" slices and arrange on the baking sheet. Top each slice with enough parmesan to cover the top, as well as a sprinkling of basil. Bake for 10 minutes, until the cheese is melted and bubbly. Top with the fresh chopped Italian parsley.
