I got the pipe dividers working by adding this in a conditional comment:
ul.navlist li {
border-left: 1px solid #353535;
padding: 0 0.4em 0 0.4em;
margin: 0 0.4em 0 -0.4em;
}
ul.navlist li:first-child { border-left: 0; }

Thanks everyone. You've helped me clear my fuddled brain. The simplest
and obvious thing is to use 'text-align: center;' and move on. Sometimes
we get so wound up in this CSS you can't see the Simplicity for the
Style (or something like that).
