From the suggestions received (thank you all very
much) I reconfigured the hard-drive with a 45 meg
Apple partition, added BootX, and a copy of the kernel
from the distribution disks.
  Reconfigured the remaining space as the Linux
partitions, reinstalled Linux, and it properly
launches Linux from the BootX application.

  I would strongly suggest that release documents
and/or lists of compatible hardware be updated to
avoid this issue in the future. 

"Performa 6360's require a minimal MacOS (7.5?,
< 40 Meg partition) and use of the BootX
Application or Extension in order to boot into
Linux."
