I know this will not fix your bug, but might help anyways:
Try using:
# varnishstat -1
By running varnishstat with the option -1 you get the stats just once, so
that you can easily copy it or pipe it somewhere else or whatever.

Hi,
when I run 'varnishstat', I cannot freeze the output by pressing Ctrl-S.
I can do it eg. in 'top' without any problems, but in varnishstat, this
just has no effect. This is in the same xterm session on the same
machine.
