Yes, changing this in /usr/lib/wine-development/wineapploader fixes it. So debian/patches/wineapploader.patch needs to be changed: <+exec wine-unstable "$appname" "$@" >+exec wine-development "$appname" "$@"
While looking at this I spotted another use of "wine-unstable" in debian/scripts/import in wine-developmeent 1.7.24-2 (the git repository is out of date).
