I cannot reproduce this with current stable version 2.11.0~alpha-12.
Setting ‘ResolverConfiguration /etc/unbound/unbound.conf’, with that
file containing an include of unbound.conf.d/*.conf seems to work
flawlessly now.

Dear Maintainer,
as subject says, opendkim does not like Debians unbound, when using the
ResolverConfiguration option.
By default Debians unbound.conf only contains a line
include: "/etc/unbound/unbound.conf.d/*.conf"
and opendkim breaks
