Hi Fran,
I did a fresh stretch install, however, I think that it's more of a bug in
the package itself, as I saw the same bug reported on an arch and fedora
forums for the exact same version.
Maybe the next update will fix this issue.

hostnamectl --pretty set-hostname $(hostname)
However the question remains: does this need to be applied on all new
installations (Stretch), or is it a problem with the upgrade path
Jessie->Stretch?
Found a workaround on StackExchange.
Apparently you just have to set the hostname on the machine.
$ hostnamectl --pretty set-hostname
And after that it works.
Here is the link to the workaround and the the bug seems to have been
already reported to upstream gnome.

When trying to turn on the wifi hotspot I get the following error.
