There is a option in the config file called "sidedef_add_del_buttons"
setting it to 1 (by editing the config file) will restore those buttons.
That's satisfactory for me. I accept it's a bit of an expert-user "here
be dragons" feature.

1.11-2 had a button on the sidebar that added a (back) sidedef to one-sided
linedefs (and somehow almost always guessed the right sector value). This
was very useful in my experience, but appears to have disappeared in 1.21-2.
