I tried to collect some more information from your crash dump.
With debug symbols this backtrace should look like below.
I guess you are running a nvidia graphics card
with the nouveau drivers?
As a workaround it may work if you start the client
from a terminal by following:
Package: nextcloud-desktop
Version: 2.5.1-3+deb10u1
Severity: grave
Justification: renders package unusable
