Yes, sorry. I was a bit over-enthusiastic when I fuond out about this feature. ;)
If there's a way to do that, sure. But you need to make sure the fonts are still visible in OOo's symbol selector, and in gucharmap.
I fear that fontconfig currently only provides a means to completely hide the font (as if it wasn't installed at all) and not to only hide it from font selectors...
