You need to produce me the exact steps. I am not going to spend time
doing such massive updates to _maybe_ be able to reproduce your issue.

How about removing all php5-packages or at least the php5-mysql
package from your system? You cannot keep running these old packages
and expect everything to work. At minimum you should have only
packages that stem from Stretch if you file bugs against Stretch.
