The package is using the llvm-defaults meta-package, so that should be 
transparent, right?

This package is using the default llvm version, so it needs no changes. Instead
this will be fixed once llvm-defaults is updated. So you just need to follow-up
on https://bugs.debian.org/cgi-bin/bugreport.cgi?bug=869752#15
