Ok, that was the trouble, sorry for my mistake.
And I suppose that I'm wrong too about memory usage show on graph
because it's written User memory so it isn't total memory usage as
shown in top.
Is it possible to show total memory usage in GSM ? I think that is more
useful that user memory usage
The graph is not configurable, that could be an upstream feature request

To what memory usage from top do you compare? Looks like you are just
displaying the wrong column in gnome-system-monitor, you can activate
the virtual memory, the writable or the shared one if you want. The
memory column doesn't count the shared usage
